Okay. I'm confessing. I have turned into a Pinterest recipe junkie. It seems like there is something new on our menu every day. Prior to Pinterest, I would just bookmark something and forget about it. We rarely tried new things. But for some reason the nice organized mouth watering pictures just encourage me to bake and cook things I normally would have never gotten around to. Like I've said countless times, no helping the excessive pregnancy weight gain. So here's some of the new recipes that have made it into our recipe binder.
Fresh Whole Wheat Double Chocolate Muffins - these were a big hit and I was thankful for a good 100% fresh ground wheat recipe - I used almond milk.
Southwest Egg Rolls - This was my first time to use egg roll wrappers. Love those little things now. Great recipe but I apparently didn't use enough seasonings. Will certainly make these again. Love that they are meat free.
No Bake Energy Bites - these are great, kind of like healthy cookie dough. I've yet to make them with flax meal. I finally bought some more so next time. Sadly, my kiddos do not like peanut (or any nut) butter so they didn't care for them.
Homemade Potato Chips - these were awesome and so much better for you than store bought!
Loaded Mashed Potatoes - so not so healthy but I did this on a night when we were having leftovers but we didn't have enough to make it meal. I did 1/2 a recipe and it was ALOT.
30 Minute Homemade Pretzels - really easy and really yummy. I did some with cinnamon sugar but didn't use near enough. So if you do the sugar route be sure to add alot!

I actually had a belated Christmas party a couple of weeks ago that was Pinterest themed! The host decided she spent way too much time pinning pictures of what she wanted to make rather than simply making them herself. Some recipes were good, some not so much! But I would agree with you - pinterest has definitely been a good motivation to keep my trying new recipes!

What a neat idea to have a Pinterest inspired party. I've made my share of Pinterest flops. : ) I've deleted lots of pins over the months but we've found some great things too! Your new nephew is adorable!
